Quick & Easy Buttermilk Biscuits

INGREDIENTS

  • 2 cups all purpose flour

  • 4 tablespoons unsalted butter

  • 1/2 teaspoon kosher salt 

  • 1 1/2 tablespoon sugar

  • 1/2 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/4 cup vegetable shortening

  • Egg wash ( ONE EGG + 1 TEASPOON WATER )

  • 1 cup buttermilk

INSTRUCTIONS

  1. Place shortening and large mixing bowl in freezer, please allow 10-15 minutes to chill.

  2. Preheat oven to 425 degrees.

  3. In a large bowl, sift flour, baking soda, baking powder, sugar, salt and whisk until all ingredients are evenly incorporated. (If you don’t own a flour sifter, omit that part of this step.)

  4. Add cold shortening to flour mixture, use your fingers to gently incorporate shortening into the flour.

  5. Grate half of the cold butter into flour mixture, fold in butter with a rubber spatula. Repeat steps for second half of butter.

  6. Use your fingers to LIGHTLY smash butter with flour.

  7. Add buttermilk in three parts, gently folding after each addition. 

  8. Mix dough until all ingredients are combined and a shaggy and wet dough forms.

  9. Flour your work surface.

  10. Fold dough onto floured work surface.

  11. Sprinkle flour on the dough and your hands because this wet dough will stick to your hands. 

  12. Gently knead dough and fold dough over quite a few time. (You’re creating layers by doing this.)

  13. Press dough out into a 1” thick rectangle with your hands. 

  14. Flour a 2.5” cookie cutter or an average size rocks glass.

  15. Press cookie cutter (or glass) directly into the dough without twisting or turning. Repeat until you’ve cut all of the dough into biscuits. (This is a zero-waste recipe, so if you have excess dough after making the cuts, roll dough into a ball and repeat until you have no more dough).

  16. Place biscuits onto a baking sheet lined with parchment paper or your favorite baking dish.

  17. Brush biscuits with egg-wash.

  18. Bake in preheated oven for 13 minutes. (If you'd like yours a bit more golden brown, bake for two additional minutes. Just be sure to keep a close eye on them!)

  19. Brush with butter immediately after removing from oven.

  20. Take one hot, buttered biscuit, slather on your favorite jam or preserves and enjoy because you’ve worked your a** off!
